Abstract

The results of research of structure of emulsion that appears in the effluents of productions of food oils have been presented in this article. The type of emulsifier is found out; the effective method of destruction of emulsions is substantiated on the basis of their composition. The method of destruction emulsion, that provides the quality cleaning of effluents, and does not result in formation of additional pollutants, has been offered.
