Сучасні тенденції промислової переробки фруктів в Україні: економічний аспект

Abstract

Industrial processing of fruits is one of the promising areas for the development of Ukraine’s agro-industrial complex. It contributes to increasing added value, ensuring food security, and enhancing export potential. The report presents a comprehensive economic analysis of the sector’s trends under the conditions of full-scale war, logistical challenges, and adaptation to European markets. Based on open data, the dynamics of raw material production, processing volumes, export-import structure, investment activity, and enterprise profitability were examined. Special emphasis is placed on the transition to deep processing (shock freezing, concentrates, purées, and snack products), which helps reduce seasonal crop losses and significantly increase profit margins compared to the sale of fresh raw materials.
